BURGER TIME



Whipped up this burger a week or two ago, I've been slacking in the post department due to a hectic real life, but the good news is: I have been eating. And when I eat things, things get posted.

......eventually.








So half pound burger, did the thing I've been doing recently, which is making 2 thinner, wider patties, putting a thick slice of onion on one, and sandwiching it in, sealing the edges before cooking. Kind of an onion-meat ravioli, if you will. Honestly, this one didn't work out so great on that front. That trick works better when you pan-fry, and this guy was grilled. Also, I had 90% lean beef for this one. A higher fat content--at least 15% fat if not higher-- definitely helps get that onion a-steamin when you cook it up. All in all though, this was a very, very yummy burger. Those pickles are grandmother-made bread and butters, too, which definitely didn't hurt.
